Chocolate Muffins with Greek Yogurt

Tasty and Healthy. These Chocolate Muffins with Greek Yogurt are so nice they’re hard to put down

These chocolate muffins with Greek yoghurt are not only super airy and tasty but they are extremely easy to make.

If chocolate isn’t your thing then just replace the cocoa powder and chocolate chips with the filling of your choice in an equal amount.

Fresh or frozen fillings work just as well. Why not experiment with blueberries, raspberries, apples or bananas until you find your favorite.

INGREDIENTS:

• 75g unsalted butter
• 75g caster sugar
• 200g plain flour (multi-purpose)
• 1/2 teaspoon bicarbonate of soda
• 2 teaspoons baking powder
• pinch of salt
• 100g Greek yoghurt
• 100ml semi-skimmed milk
• 1 large egg
• 200g chocolate chips
• 4 tablespoons cocoa powder

HOW MANY/HOW LONG

Makes 12 muffins and takes around 30 minutes to prepare.

METHOD:

• Melt the butter in the microwave for approx. 90 seconds.
• Preheat the oven to 200 celcius
• Mix all the dry ingrediants together (flour, bicarbonate of soda, baking powder, sugar, cocoa powder and salt)
• Combine the butter, milk, yoghurt and egg together and beat together
• Pour the wet mixture into the flour and beat with a wooden spoon.
• Spoon in the chocolate chips
• Take a muffin tray and paper muffin cases and spoon the mixture into them.
• Bake for about 10-15 minutes (use a wooden toothpick to test when the center of the muffin is dry)

Serve with fresh cream or ice cream and a glass of cold milk.
